What To Do On Left Over Chicken

What to do with leftover chicken? I know that sometimes we always have the days where we have so many leftovers in our fridge and we just don’t’ know what to do with it.  The other night as I was planning for dinner, I was wondering myself on what to prepare for dinner.  Since I have some leftover chicken in the fridge I decided to create a recipe that won’t take me a long time to prepare.  This recipe is very simple and easy, and it doesn’t require a lot of your time.  You can even prepare this ahead of time, or make it a mother & daughter time in the kitchen.

This recipe doesn’t just apply to your leftover chicken.  You can use this method with any leftover you have such as turkey, beef or even make this as a vegetarian.

So let’s get started.

Sauteed the onions, tomatoes and garlic together. Remember not to burn your garlic.

Add the chicken and let it simmer for just 3 minutes.
After scooping the zucchini meat out, arrange them on the baking sheets and baked it for 15 minutes.

Now let get started on how to assemble this meal.

First, add your refried bean as a first layer on the zucchini.
Add the meat on the top of the refried beans.
Add your cheese on the top of the meat. The cheese is your last layer.

Baked it for another 15 minutes enough to heat up the beans and melt the cheese.

  1. 4 Zucchini Squash
  2. 1 Can Refried Bean
  3. 1 small onions chopped
  4. 1 small tomatoes chopped
  5. 2 tablespoon of garlic
  6. 2 cups of the zucchini meat
  7. salt & pepper to taste
  8. 2 tablespoon of olive oil
  9. 3 cups leftover chicken (any leftover meat will work)
  10. cheese of your choice


  1. Preheat the oven to 350 deg.
  2. Cut the zucchini in half scoop out the meat and set aside.
  3. Lay the zucchini on the cookie sheets, spray it with olive oil and salt and pepper.
  4. Baked it for 10 minutes.
  5. While baking the zucchini let’s prepare our stuffing by heating the olive oil in the skillet.
  6. Once it’s hot add your onions, tomatoes, garlic sautes for 2 minutes.
  7. Then add your chicken mix well and let it cook for 3 minutes or until it’s brown.
  8. Add your zucchini meat, salt & pepper, let it cook for about 2 minutes.
