|
- 1 cup natural peanut butter
- ¼ cup or 25 sugar free chocolate chips
- ½ cup swerve powdered sugar devided
- ¼ cup unsweetened shredded coconut
- ½ cup nuts
- 3 tbsp coconut or almond flour
- 3 tbsp cocoa powder
- 1 tbsp peanut butter protein powder
- 1 tsp vanilla extract
- 1 tbsp truvia nectar
- Steps 1-4: Add cocoa powder, 1/4 cup powdered sugar, flour and peanut butter protein powder to a medium mixing bowl.
- Steps 5-6: Add nuts and coconut. Mix together.
- Steps 7-9: Add Chips, vanilla, and Truvia Nectar.
- Steps 10-11: Add peanut butter and mix very well with a sturdy spoon. Place bowl in the fridge for 15-30 minutes to firm up the mixture. This makes rolling it into balls much easier.
- Steps 12-13: Roll into 1” balls and place on a cookie sheet. Put back in the fridge for about 10 minutes.
- Steps 14-16: Combine remaining powdered sugar and cocoa powder. Mix together. Remove balls from fridge and roll into the mixture. Store in an airtight container in a cool area or in the fridge.
This makes approximately 25 1" balls. So this can feed about 20 people easy, but we have to remember some may want another ball, especially how delicious this is.
