
Here’s another recipe for everyone, today I am sharing your this chicken quinoa with veggies. This dish is full with so much flavor and super easy to make as well. If you love eating quinoa as much as I do, then this recipe is for you. I make this when I do meal prepping, or when I don’t have much time in my hand. You can have your meal ready in 30 minutes.

The indigents are pretty simple, most of these ingredients you probably have on hand already. I used chicken but you are welcome to use whatever meat that you like. However chicken is just on the healthier side for me, since my husband can’t eat pork. Add the veggies to this recipe really gives it color, and more flavor.

Pair this with a glass of wine, to make it even better. If you like cooking meal that is pretty simple and easy. Then this recipe is for you, I love making this because of how simple it is. Yet, the taste is delicious, I’d say this is a kids friendly food. I know my kids enjoyed this dish, since they love eating vegetables.

- 1½ Cup chicken breast cut into bite size
- 1 inches ginger cleaned and sliced
- ½ cup better melon chopped, soak in salt & squeeze the juice out reduce the bitterness.
- 1 lemon
- ½ cup onions chopped
- 3 tbsp lemongrass chopped
- 2 tbsp soy sauce
- 3 tbsp olive oil
- 1 tbsp sweet basil
- 8 cloves garlic chopped
- 2 cups quinoa washed
- 1 cup shredded carrots
- 1½ cups red cabbage
- 4 cups water
- salt & blackpepper to taste
- In a big pot add the oil and let it heat up. When the oil is ready to start adding your onions, lemongrass, and ginger. Mix well, let this sizzle for 3 minutes.
- Add the garlic, and basil. Stir it until it's well combine. Cook this for another 2 minutes.
- Add the chicken, soy sauce, lemon juice, salt, and ground blackpepper. Mix well until all ingredients are well incorporated. Cover, and cook for 10 minutes in medium heat.
- After 10 minutes put the carrots, bitter melon, cabbage, quinoa, and water. Mix well, make sure that it doesn't anymore salt, if you need to add more salt & ground blackpepper, now it's the time to add it.
- Bring the mixture to boil, once it's start boiling let it cook for about 15 minutes.
- Serve warm and enjoy.

since we are vegetarians, i will be substituting the chicken for some other protein – tofu maybe.. but will try it out.. has been a while since i made a quinoa dish
