
Today I am sharing you this delicious Baked One Skillet Chicken & Rice. This dish is very delicious and it’s healthy as well. Perfect for meal prepping, or for daily cooking. It doesn’t take long to cook this dish at all, my husband and kids enjoyed this dish. The combination of the leftovers rice which is the Quinoa Blend Rice, mix it with the Knorr Pasta & Rice blend was perfect.

You are welcome to use any use you have available. Brown rice or white rice will probably taste great as well. The reason I used the quinoa blend rice, and the knorr rice and paste blend is it was all that I have available. This baked one skillet chicken & rice patties, was a big hit in our house. We didn’t have any leftovers at all, which is amazing.

I added spinach just to add a little bit color to the dish. However, you are welcome to add any green that you want. Spinach though taste delicious with this for some reason. There are four of us in our household, and these dish was perfect portion for all of us.

- 1 lb ground chicken
- 1 ½ inches ginger cleaned & sliced
- 1½ cups leftover rice any rice will do
- 1 5.5 oz Knorr Mushroom Pasta & Rice Blend
- 3½ cups water
- 1 cup spinach
- 2 stalk lemongrass cleaned & chopped
- 4 tbsp olive oil
- 1 tbsp garlic
- 1 tbsp hoisin sauce
- 1 tbsp soy sauce
- 1 tbsp dale sauce
- ½ cup sliced onions
- salt & pepper to taste
- Pre-heat your oven to 375 degrees.
- In the bowl where the ground chicken is, add the ½ of the soy sauce, add the dale sauce, and the hoisin sauce. Also don't forget to sprinkles a little bit of salt and pepper to the chicken mixture. Mix well until all the ingredients are well combine. Form your chicken patties and put it aside.
- In the iron skillet add the ½ of the oil, and let it heat. Once the skillet is ready start add the chicken patties. Let the patties cook for about 2-3 minutes. Just enough to get that light brown color. Do the same thing to the other side.
- When finished browning all the chicken patties, take it out from the skillet put in a plate and put aside.
- Using the same skillet add the rest of the oil, then add the onions, lemongrass and ginger. Cook for 3 minutes.
- Add the garlic, leftover rice, knorr mushroom pasta & rice blend, the rest of the soy sauce, some leftovers of the hoisin sauce, water, salt, black pepper, and spinach. Mix well until all the ingredients are well combined. Bring to boil.
- When it start boiling go right ahead and add your chicken patties back. Bring to boil for about 3 minutes.
- Turn off your stove and let it conitinue cooking in the oven for about 20 minutes.
- Serve warm and ejoy.
Remember to taste your rice and spinach before adding back the patties. Just to make sure it doesn't need any more salt.
