Spaghetti Squash with Chicken

I’m so excited to share this recipe, Spaghetti Squash with Chicken is something that I just came up out. I know spaghetti don’t have many vegetables because must of the time we just mix sauce and meat.  However, at this time I decided to add more ingredients to make it tastier.  As some of you know, I am gluten-free, so that’s why I used the spaghetti squash.

On my spaghetti squash with chicken, I used about three boneless chicken breast, which I sliced into thin. The spaghetti squash I used is a large size, then I also use parsley, tomatoes, ginger, green onions, onions, mix color bell peppers, and garlic. Venison with Winged Bean

Today I am going to share you this Venison with Winged Bean.  Another delicious recipe that I came up since I was not sure what to make for dinner a few nights ago.  Winged Bean is very delicious vegetables that you can use on a lot of recipes.  You can even make a salad using Win Bean, I grew up eating Win Bean all the time since we have this on our farm.

Winged Bean is also known as the Goa Bean, four-angled bean, four-cornered bean, Manila bean, and Dragon bean.  You will find a lot of this in South and South Asia. They are very easy to grow and when they put out the bean it’s a lot.   I remembered my mom and grandmother uses the winged bean in a lot of their recipe.  It’s very delicious, and it’s crunchy when you use this to a salad it added more flavor to it.

Since I came to the US it’s my first to ever eat the Winged Bean. The reason is, it’s hard to find this kind of vegetables anywhere.  I have to go to a farmers market that carries all international food.  Luckily when I went to Buford Farmers Market in Atlanta, I found it and oh my the price is high but you know what it’s worth buying.  My husband definitely enjoyed eating this winged bean.

Incorporating this with Venison and other spices was a great idea.  Since I don’t have the beef meat to cook, I decided to just use Venison since I have some tenderloin left. On this recipe, I used 2 pounds of the venison,  sliced onions, cloves of garlic, tomatoes, ginger, oyster sauce, olive oil, 2 pack of the winged beans (I think I have 20 total), salt and ground peppers.

Chicken with Bell Peppers and Pineapple

This chicken with bell peppers and pineapple is a very simple recipe yet healthy.  Sometimes I love cooking something that is easy and quick.  I used boneless chicken breast for this recipe, you can also use the chicken strips.  Using pineapple to this recipe definitely add more flavor to the entire dish.  The combination of bell peppers, onions, garlic. ginger and pineapple are just amazing.

If you are using the boneless chicken breast you can cut it into big strips.  However, if you buy the chicken strips that don’t require cutting it’s even better.  It will make your preparation time quicker and faster.   I also use about two cups of water to this recipe.  You will also need a little bit of soy sauce, star anise,  salt, and ground black peppers.

This is perfect to pair with brown rice or even white rice.   If you don’t like eating rice, you can make cauliflowers rice as well, it’s healthier.  I cut the bell peppers the way my chicken is cut that way there is some kind of uniform. When I cook vegetables, I normally don’t overcook them that way I still have the crunchy on the vegetables. Read more

Honey BBQ Wings

Honey BBQ Wings is a recipe that I’m gonna be sharing with you today.   I was thinking of making spicy wings but since my daughter will be eating the wings, I decided to make the honey bbq wings.   You will need 12 different ingredients to make this wings.  Not bad right? These wings are really delicious, and so tender it come off the bones just perfect.  Total of wings I used on this recipe is about 32 wings, over 3 pounds I would say.

When my daughter and I went to Walmart today, I saw few wings that were cut already on sale.  So I didn’t hesitate on buying them, I bought 3 packages of small wings. I’d say they are about 1 pounds or so on each package.  Most of the ingredients that I used in this recipe was already in my pantry.  Although I didn’t have bbq sauce I found a substitute for it, which is the ketchup and brown sugar.

Honey BBQ Wings is something that I just came up with because I wasn’t sure how to cook all these wings.  I asked my husband if he wants to eat some wings and he was like oh yeah.  Then I was like you know what I will make some honey bbq wings. Something different that we all going to enjoy. Simple & Healthy Eating

Simple & Healthy Eating is a must in our house especially we have a busy schedule.  Not just the busy schedule we also have to watch what we eat because we want to maintain our health.  Since my husband got out the hospital about two weeks ago. He has been hungry a lot and has been craving for all sort of food.  Of course, these are food that I have cook for him before.

When I don’t have a lot of time or just completely blank on what I’m gonna make for dinner I always just make up something that I simple yet healthy for all of us.  I was really debating on how to name this post, so I came up with Simple & Healthy Eating.  I have called this Simple & Healthy Eating it’s because the food I made was baked, steam and sauteed using olive oil.  When it comes to using oil I always limit myself to about 2 tablespoons just enough to cook the onions and garlic.
