Today I’m sharing these 15 delicious recipes to sneak more veggies into your diet. Eating healthy is very important in our household since the day my husband landed in emergency twice so much has changed in our eating habit. We watch everything that we eat, no fried food but of course every now and then I do cook something that requires frying.
Since his first incident at the ER where I almost lose him, I changed my way of cooking and incorporating it with healthy veggies. These recipes I have here would be perfect to fit your diet. Most of these are easy to make, and honestly, quinoa has become my favorite to eat. It’s my substitute for rice. Eating vegetables is great for our body and so many recipes that you can do with veggies to make it taste even better.

Thankfully my little lady is really good at eating her veggies and I absolutely love baking with veggie substitutes but I’ve never heard of Spinach Brownies?!? Wow!! Definitely gonna give this one a shot!

One of my favorite. I love quinoa period ahahahha. The sweet potato is a great replacement for potatoes.
So many great ideas! I got the book Sneaky chef years ago and added veggies to everything! I still replace half the ground meat in recipes with chopped mushrooms. I also do spaghetti squash instead of pasta and cauliflower in place of rice.
I love using spaghetti squash as well, I think it’s a great replacement for past. Cauliflower rice is my favorite.

I’m very lucky in that both my children love their veggies. My son just cannot get enough of them. We just have to hide iron rich vegies in meals as he has always been very low in iron.
That is good, veggies are great to be included in our meal.
