Stuffed Bell Peppers with Turkey & Cauliflower

Stuffed Bell Peppers with Turkey 7 Cauliflower is a very easy recipe to make and so delicious.  Instead of using rice I decided to use cauliflower to make it healthier.  I know there are many variations recipe out there using bell peppers.  However, you can always create something different to be different from the rest.  On this recipe, you can also use brown rice if you don’t want to use the cauliflower.  But I must say the cauliflower is amazing, it added a nice flavor to this dish.

The ingredients that I used in this recipe are not hard to find.  To make this even better you can also use ginger, at that time I made this recipe I was completely out of ginger.

I also use three different kinds of cheese, it’s just my preferences.  You can use whatever cheese you want.  The combination of these three cheese was delicious.  I didn’t really intend to add the swiss but since I have some leftovers from the previous cooking I made, I have decided to use it.

One of the stuffed bell peppers can definitely fill you up.  We are 4 in our family and we didn’t all of these at all.  Which is great because we end up having some leftovers for the next lunchtime.

For the Ingredients:

1 to 2 lbs grounds meat of your choice.
1 small onions diced
1 small head cauliflower chopped.
6 total bell pepper you can mix any color or just one color. (Top cut and get the seeds out)
1 tablespoon of coconut oil or olive oil.
salt and pepper to taste
1 teaspoon dried parsley (You can add more if you want )
2 tablespoon dice ginger
1 jar of big spaghetti sauce
Cheese of your choice (I used Swiss Cheese, Mozzarella, and Parmesan Cheese.)


Pre-heat your oven to 350 Deg.
While that is preheating, heat up your skillet. Once it’s hot add your oil, then onion and ginger. Let it cook for about 2 minutes until the onions are translucent.
Add your ground turkey and cook it until it’s brown about 5 minutes or so.
Then add your cauliflower, sauce, salt & peppers, parsley and other spice that you want to add.
I let it cook for about 5 minutes, then turn off the heat.
In your Pyrex pour the remaining sauce that you set aside. Add water inside your jar to get the rest of the sauce and pour it inside the Pyrex.
Put the bell pepper in the Pyrex and start your assembly.
Let it cook for 18 or 20 minutes until your bell pepper is a cook.
Halfway through cooking remember to add your cheese.Save
