Turkey Spaghetti Squash

Turkey Spaghetti Squash is one of my favorite dishes to cook among all the dish I cook at home.  This has become the favorite of my step-daughter she requested this dish for over a month, so finally, I was able to get my hand on the spaghetti squash while I’m in the store without forgetting it.  Yes, I made sure it was on my list, I told my husband that I want to surprise my step-daughter for something that she has been wanting to eat.

Making the Turkey Spaghetti Squash wasn’t had at all.  I baked my squash for about 20 minutes, it was perfect Al dente.  However, cooking your squash is all depends on the size of the squash. The two I bought wasn’t big nor small either, it was in between.  Before I put them in the oven, I made sure that it’s clean and seasoned with salt and pepper.  I put it facing down on my baking sheet with a little bit of water in the bottom.

If you are gluten-free like my daughter and me, then this turkey spaghetti squash is what you want to eat instead of the pasta.  It’s healthy, and my kids really enjoyed this dish.  With the two spaghetti squash that I bought it was enough for the 4 of us. It was actually perfect.  However, I had some leftover spaghetti sauce left which wasn’t a big deal.  I just put them in the container and to the fridge.  You can also put some in the freezer and just heat it up whenever you need spaghetti sauce.

Once the spaghetti sauce was done and my squash is done baking.  I assemble the dish using the spaghetti squash shell, once it’s all assembled I topped it with some shredded mozzarella cheese and parmesan.

Ingredients
  • 1 lb ground turkey
  • 2 Spaghetti Squash medium size, seeded and cleaned
  • 4 cloves of garlic chopped
  • ½ cup onions dice
  • ½ cup tomatoes diced
  • 1 cup shredded carrots
  • 4 cups spaghetti sauce
  • Parmesan cheese
  • mozarella cheese shredded
  • salt & pepper to taste
  • ½ tsp parsley
  • ½ tsp Italian seasoning
  • 3 tbps olive oil
  • ¼ - ½ cup water for baking the squash

Instructions
  1. Pre-heat the oven in 350 degrees. In the baking sheet put spray with olive oil spray, add the water, then put the squash face down. Baked for 20 minutes, or until the squash is Al dente. "Do Not Over Bake".
  2. In a big pan, heat-up the oil. Once the oil is ready, add the onions and garlic and let it cook for about 2 minutes.
  3. Add the tomatoes, carrots, parsley, salt, pepper and italian seasoning. Mix well until all the ingredients are well combine. Sizzle for about 2 minutes.
  4. Then add the turkey, stir and let it brown. About 4 to 5 minutes.
  5. Add the spaghetti sauce, mix all the ingredients until it's well combine. Bring to boil, and simmer it for about 15 minutes.
  6. Once the squash is done baking, let it cool down, then using the fork slowly scrape the spaghetti squash.
  7. Afrer scraping the spaghetti squash, top it with turkey spaghetti sauce, and the cheese of your choice.
  8. Serve and enjoy.

  1. I’m a huge fan of squash so I think this dish would be a perfect dinner for me to try! I struggle with adding protein to it, but this sounds like it would go perfectly.

  2. I haven’t ventured into the “spaghetti squash” realm yet. I think it’s time I give it a try! This recipe looks so easy, yummy, and healthy!!
