Stuffed Rotisserie Chicken Biscuits

Stuffed Rotisserie Chicken Biscuits is very delicious and so easy to make.  It’s something that you can make for a Superbowl party or even tailgating.  Since today we cannot go anywhere due to our Alabama weather.  I have decided to make something, I wasn’t sure what to really make, to be honest with you all.  Then I saw my rotisserie chicken breast sandwich meat, the biscuits, and some cheese.  It gives me an idea to make this stuffed rotisserie chicken biscuits.  I know even know if the recipe name sounds legit but that’s what I came up with.

I guess being at home during this winter weather just makes me want to bake something to snack around.  Stuffed rotisserie chicken biscuits don’t require a lot of ingredients.  You probably have all the ingredients at home already.  I used what I have available at home, the cheese I used is cheddar cheese and just sliced them up into cubes.  I also used some of the provolone cheese since I didn’t have enough cheddar.

The canned biscuits I used is Pillsbury flaky biscuits, I used about two canned of it.  You can pretty much stuff this biscuit with anything that you want inside of it.  I have done just cheese stuffing before and it was delicious as well.  This stuffed rotisserie chicken biscuit is perfect to prepare before your child comes home from school.  It’s some easy, very cheesy and will fill them enough until dinner time.

I came up with this recipe because my daughter seems to be hungry all the time.  So my mind was running like crazy on what to prepare that can be a snack all day.  Luckily we have some sandwich meat, cheese, and biscuits.  Plus this cold weather is driving us insane being stocked inside the house.  I am sure a lot of parents can relate to me today.  As I’m sitting here in front of the computer waiting for the biscuits to finish baking.  My darling daughter is telling me that whatever I’m cooking is smelling really delicious.

When my husband called me just a few minutes ago and I was telling him what is baking inside the oven.  He was like that is perfect I am hungry all the time lately.  I am excited to see the finish of this recipe since they are cheese lovers.

This is how it looks after I baked it for 30 minutes the one on the outside was cooked but the one in the middle wasn’t completely cooked it was still doughy.  So I had to put it back in the oven for another 20 minutes.

I tried baking mine for 30 minutes and the edge was cooked but the one in the middles wasn’t complete cook yet.  It was still a little bit doughy, so I bump up the heat of the oven from 365 to 375 degree to cook for another 20 minutes.  When I had 8 minutes left on the clock I topped it with parmesan cheese and continue baking until it’s golden brown.  Each oven has a different temperature so make sure you watch yours.

Serve with some marinara sauce or just eat it the way it is. My husband loves dipping this with some marinara sauce.

Ingredients
  • 2 canned Pillsbury biscuits
  • pavolone & cheddar cheese cut into cubes
  • 3 cloves garlic pinely chopped
  • 2 tbsp butter melted
  • 1 tbsp parsley
  • ½ cup Parmesan cheese
Servings: people
Instructions
  1. Pre-heat the oven to 365 degrees F.
  2. Melt the butter in the sauce pan together with the parsley and garlic. Let it simmer for about 1 minute in low heat.
  3. Flatten the biscuits and stuffed with the rotisserie chicken and cheese.
  4. Arrange the finish biscuits into cast iron that has been spray with non-stick.
  5. Brush it with the melted butter and put in the oven.
  6. Baked for 45 to 50 minutes or until the biscuits is done and no more dough. When you have 8 minutes left on the clock remember to topped the biscuits with the parmesan and let is finish cooking.
