Spaghetti Squash with Chicken

I’m so excited to share this recipe, Spaghetti Squash with Chicken is something that I just came up out. I know spaghetti don’t have many vegetables because must of the time we just mix sauce and meat.  However, at this time I decided to add more ingredients to make it tastier.  As some of you know, I am gluten-free, so that’s why I used the spaghetti squash.

On my spaghetti squash with chicken, I used about three boneless chicken breast, which I sliced into thin. The spaghetti squash I used is a large size, then I also use parsley, tomatoes, ginger, green onions, onions, mix color bell peppers, and garlic. I also use dried oregano, olive oil, and the Filipino sweet spaghetti sauce.

You also need salt and pepper to this recipe, which is not included in the pictures. I baked the spaghetti squash for about 15 – 20 minutes before I put it in the oven I sliced it in half, took the seeds out and sprinkle some salt, pepper, and olive oil.

Once it’s done I use my fork to get all the spaghetti squash inside the shell. Spaghetti Squash with Chicken is very delicious and healthy. Perfect to include in your meal planning, and carry it for lunch. This dish didn’t last us for a week at all, because everyone loves it.

Ingredients
Prepping the Spaghetti Squash
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp ground pepper
  • 1 big Spaghetti Squash (sliced in half and cleaned)
Ingredients
  • 3 tbsp olive oil
  • ¼ cup fresh parsley
  • ½ cup tomatoes
  • 3 tbsp fresh ginger
  • 6 cloves garlic (sliced)
  • ½ cup colored peppers
  • ½ cup onions (chopped)
  • ½ cup green onions (sliced)
  • 2 tbsp oregano
  • 3 Boneless Chicken (thinly sliced)
  • 2 cups spaghetti sauce (any spaghetti sauce will do)
  • salt & pepper (to taste)

Instructions
Baking The Spaghetti Squash
  1. Pre-heat the oven to 400 degrees.
  2. In the cookie pan, put the spaghetti squash after it's seasoned with salt, pepper and olive oil.
  3. Baked for about 10 to 15 minutes.
  4. Once it's done baking, let it cool down and use the fork to get the spaghetti squash.
Cooking Procedures
  1. In a big skillet or pot heat the oil in medium heat. Once the oil is hot, add the garlic and ginger. Cook for about 2 minutes.
  2. Then add the onions, and tomatoes together. Mix well, cook for 3 minutes.
  3. Add the chicken, oregano, salt and ground pepper. Mix well until all the ingredients are will incorporated. Cover, let it cook for about 10 to 15 minutes.
  4. Add the parsley, green onions and the spaghetti sauce. Let it simmer for just 4 minutes.
  5. Then add the spaghetti squash, mix well and let it simmer for about 4-5 minutes.
  6. Turn off the heat, serve and enjoy.
