Sauteed White Squash with Sardines

Today recipe is Sauteed White Squash with Sardines.  Such a simple dish to make, and doesn’t require too much of the ingredients.  I just put this together on the last minute since I had no idea what to make for dinner.  White Squash is very popular in my country, I can remember eating them all the time since we have planted some on our farm.  White Squash is known as Upo in my language, this has a softer texture than the regular squash.

You can buy white squash at some international store because I don’t think I have seen our local grocery store with this type of vegetables.  To this recipe, I added a handful of spinach and some spices that I wanted to go with it.  Then I also use two cans of sardines, onions, olive oil, salt, water, and pepper.  I also used fresh parsley, ginger, tomatoes, garlic, and fresh jalapenos (this was optional).   The reason I added the jalapenos, is for it to have a little bit of spice.  Yes, I do love spicy food, but I don’t make them all the time since my husband and daughter don’t like it too spicy.

Sauteed White Squash with Sardines is very fulfilling to your stomach.  Adding the spinach to this recipe is gives it more flavors and color to the dish.  If you don’t like eating sardines, you can also use ground meat to this recipe instead of the sardines.  Most of the time when I cook Upo I used chicken or turkey meat.  And if you are vegetarian you can use the tofu to this recipe,  I hope that you all enjoy this recipe.

Ingredients
  • 2 tbsp olive oil
  • 2 small can of sardines
  • 2 tbsp fresh ginger sliced in thin
  • 6 cloves garlic chopped
  • 1 small tomatoes dice
  • 2 jalapeño peppers seeded and slice
  • 3 tbsp parsley minced
  • 1 medium size white squash (opo squash)
  • 1 bunch of spinach
  • 2 cup water
  • salt and pepper
  • 6 tbsp soy sauce
Servings: people
Instructions
  1. Heat the olive oil in the skillet, over medium heat.
  2. Add the ginger, and onions. Sauteed for about 3 minutes.
  3. Next add the garlic, and tomatoes. Cook for another 2 minutes. Watch for the garlic so it won't get burn.
  4. Add the sardines, and jalapeño peppers. Let it cook for about 2 minutes.
  5. Then add the white squash (opo), water, and soy sauce, and mix well. Cook for about 5 minutes.
  6. Last add the spinach and parsley. Cook for another 5 minutes.
  7. Serve with rice.
