Who doesn’t love carrot cake? Well, this little number will knock your socks off especially after adding the frosting and pumpkin spice. This pumpkin spiced carrot case is absolutely bursting with flavors and is a define yes to any dessert table.

I know New Year is approaching and we start to ask ourselves on what to prepare for dessert. Well, pumpkin spiced carrot cake with a spiced frosting would be perfect to make to welcome the New Year. Your guest will definitely enjoy this one especially with the spiced frosting in the middle and top. Oh, will definitely give that flavor that everyone will love and enjoy.

I am not big into dessert but I do make dessert on occasions like New Year, Christmas, Birthday and Thanksgiving. For some reason, it kinda gets make excited making dessert for those occasions. Pumpkin spiced carrot cake with a spiced frosting would be a great pair with some wine or even hot chocolate, hot tea or even coffee. Really, it doesn’t matter what you pair this dessert with, after all, it’s already delicious. Eating this by itself would be just fine, and you can appreciate all the flavor that way as well.

One slice of this would probably fill me up, yes I don’t need a lot of desserts to feel full. For some reason, when it comes to eating dessert I happened to get full so quick I don’t even have a chance to really explore all the dessert when that happened. However, I will definitely make an exception with this carrot cake. Just looking at this while making this post is making me think hmmmmm, should I make this for New Year or what?

What I like about this recipe is, it has the combination of cinnamon, which is one of the ingredients that I love using when it comes to baking.  Then the pumpkin and the mixture of coconut, you know it’s going to be a fantastic dessert.

Ingredients
Carrot Cake
  • 2 cups all-purpose flour
  • 3 large room temperature eggs
  • 2 ½ tsp pumpkin pie spice (can be replaced with cinnamon)
  • 2 tsp baking soda
  • ½ tsp salt
  • ¾ cup buttermilk (regular milk will do)
  • 2 tsp vanilla extract
  • 1 cup pumpkin puree
  • 1 ½ cup granulated sugar
  • ½ cup packed brown sugar
  • ½ cup vegatble oil
  • 1 ½ cup grated carrots
  • 1 cup sweetened shredded or flake coconut
  • ½ cup crushed pineapple
  • ½ cup chopped walnuts
Spiced Cream Cheese Frosting
  • 12 oz cream cheese softened
  • 6 oz butter softened
  • 3 cups confectioner sugar
  • 2 tbsp brown sugar
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¾ tsp vanilla extract

Instructions
Carrot Cake
  1. Preheat oven to 350.
  2. Generously grease and flour two 9 inch cake pans.
  3. In a medium bowl combine, flour, salt, baking, soda and pumpkin spice or cinnamon.
  4. In a large bowl beat together, buttermilk, eggs, oil, pumpkin, sugars and vanilla extract until smooth and creamy.
  5. Gradually adding the dry ingredients.
  6. Fold in the pineapple, pumpkin, carrots and nuts and coconut until combined
  7. Pour batter into your cake pans and bake for 25- 35 min or until cakes are browned on top and an inserted toothpick comes out clean.
  8. Cool cakes in the pans for 30 min and then turn them out on wire racks to cool completely.
Frosting
  1. Cream together cream cheese and butter until very smooth and creamy.
  2. Add all other ingredients and adjust if necessary.
  3. Refrigerate frosting for 15 minutes to make it easier spread.
