Ingredients
  • 3 tbsp olive oil (or any oil you want to use will do)
  • 6 cloves of garlic chopped or diced
  • ½ cup onions any color you wish to do will do
  • 1 medium size bell pepper
  • 4 pcs red potatoes medium size
  • 3 pcs carrots medium size
  • 1 can coconut milk
  • 1 can pineapple chunk drained reserve the juice to marinate the chicken
  • 1 tomato medium size chopped
  • 1 whole chicken cut into serving size
  • 3 boneless chicken breast cut into serving size
  • 3 star anise
  • salt and ground black pepper to taste

Instructions
  1. In a big pot heat up your oil, then add your onions, and let it cook for 2 minutes.
  2. Add the garlic and tomatoes, cooked for another 2 minutes.
  3. Then add the chicken, mix well until all the ingredients are well combine. Put the lid back on, bring to boil, and let it cook for about 10 minutes or so.
  4. Add the pineapple juice and let it cook in medium heat for about 30 minutes.
  5. Add the coconut milk, star anise, ground black pepper, and salt. Simmer for about 10 minutes or so.
  6. Add the patotoes, and let it simmer for about 5 minutes.
  7. Add the pineapple, and the carrots. Cook for another 5 minutes.
  8. Now add the bell pepper, and bring it back to boiling for 3 minutes.
