This Pineapple Chicken with Coconut Milk is a recipe I saw from a friend of mine. I’ve never tried combining pineapple and coconut in a dish like chicken. However, I didn’t regret doing it so, because of how delicious it came out.
My husband and daughter love this dish, a matter of fact we all enjoyed it. It took me about 30 – 45 minutes total to finish cooking this dish. As you can see in my video, none of the vegetables is overcooked. The chicken was marinating on the pineapple juice while I was prepping all the veggies.
The reason I marinated the chicken with the pineapple juice, is to give it more flavor. You can pair this dish with rice or eat it by itself. So let’s get this recipe started, shall we?
