Ingredients
  • 2 cups Rotisserie Chicken (Cut into cubes)
  • cups Mung Beans (Cooked, Cooked this in crockpot overnight for 8 hours)
  • 1 cup onions
  • ¼ cup ginger
  • cup coconut milk (I can will do, add more if needed)
  • 4 stalks green onions (Chopped)
  • 2 medium tomatoes (Chopped)
  • 3 tbsp garlic
  • 1 bunch of spinach (3 Cup Spinach)
  • ¼ cup soy sauce

Instructions
  1. In a medium-size pot, heat up the oil. Then add the onions, ginger, garlic and mix well. Let this sear for about 2 minutes.
  2. Add you chicken, tomatoes, soy sauce and cook this mixture for an additional 5 minutes.
  3. Add you liquid, mung beans, coconut milk, salt and pepper. Stir well until all the ingredients are well combine. Bring to boil, and let it cook for about 10 minutes.
  4. Now add your spinach and the green onions, mix well. Cook for about 3 minutes.
  5. Serve warm and enjoy.
