Mung Beans with Chicken (Filipino Style)

Hello everyone. So today I’m gonna be sharing you this Mung Beans with Chicken (Filipino Style). You can make this recipe in different variations. Mung beans are my favorite beans to cook, even when I was living in the Philippines. Most of the time they just mix mung beans with brown sugar after it finished cooking and eat it like a meal.

On my recipe, it’s pretty simple and easy to make. The ingredients that I used on this recipe are mostly in my pantry already. My main ingredients is coconut milk because it’s what makes this dish taste perfect. I also use spinach, ginger, tomatoes, garlic, and onions.

A great comforting soup, perfect to pair with rice or eat as is. Most of the time when I make this dish, I always cook brown rice & quinoa mix because it’s what we all like to eat. This is very easy to store as well, I normally store the leftovers in our fridge and keep in the tight container for about 4-5 days.

I hope you enjoy this recipe, mung beans with chicken (Filipino style) has become one of our favorite dish at home. Whenever my husband request this dish it makes me happy. It gives me so much happiness that he is adopting and loving the food I enjoyed to eat growing up.

The way I cooked the mung beans is using my crock-pot, I let it cooked for 8 hours in low. The next morning, the mung beans is ready. I also saved the liquid that I used to cook the mung beans. You can add more liquid if you need more, just remember to balance your salt and pepper to make this recipe taste delicious.

Ingredients
  • 2 cups Rotisserie Chicken (Cut into cubes)
  • cups Mung Beans (Cooked, Cooked this in crockpot overnight for 8 hours)
  • 1 cup onions
  • ¼ cup ginger
  • cup coconut milk (I can will do, add more if needed)
  • 4 stalks green onions (Chopped)
  • 2 medium tomatoes (Chopped)
  • 3 tbsp garlic
  • 1 bunch of spinach (3 Cup Spinach)
  • ¼ cup soy sauce

Instructions
  1. In a medium-size pot, heat up the oil. Then add the onions, ginger, garlic and mix well. Let this sear for about 2 minutes.
  2. Add you chicken, tomatoes, soy sauce and cook this mixture for an additional 5 minutes.
  3. Add you liquid, mung beans, coconut milk, salt and pepper. Stir well until all the ingredients are well combine. Bring to boil, and let it cook for about 10 minutes.
  4. Now add your spinach and the green onions, mix well. Cook for about 3 minutes.
  5. Serve warm and enjoy.
