Instant Pot Red Beans and Rice

It’s that time of the year where soup becomes the most important each meal. Well really, not just each meal but during lunch and dinner for the most part.  With that being said though soup in the morning won’t be bad I guess.   A lot of us start gathering recipes that would be perfect for the cold weather.  Matter of fact I have found few recipes in my drawers the other day that I remembered collecting for the cold weather.

This instant pot red beans and rice are so easy to make and convenient to all busy parents.  If you are always on the go then using your instant pot would be a great idea.  Red beans and rice just makes me hungry each time I think of it.  Beans are my favorite to take on the winter, partner with some cornbread or rice.  If you don’t have an instant pot you can easily make this recipe using your slow cooker as well.  I don’t own instant pot yet, but the other day I was giving my husband a hint that I needed it, lol. 

I hope that this instant pot red beans and rice would help you plan your week ahead of time.  This is definitely great to be included in your meal planning, pair this with rice or cornbread or anything you want to go with this soup.   You can put the leftovers in the fridge, or freezer and just hit it up whenever you wanted to have some soup.

Ingredients
  • 1 lbs bag small red beans, rinsed and sorted
  • 1 (12 to 16 ounces) package andouille or cajun sausage, halved and sliced
  • 1 lbs leftover ham, cubed
  • 1 stalks celery, sliced
  • 1 green bell pepper, chopped
  • 1 onions, diced
  • 2 bay leaves
  • 1 tsp garlic powder
  • 1 tsp thyme leaves
  • 1 tsp dried oregano
  • 1 tsp black pepper
  • ½ tsp cayenne pepper, optional
  • 1 (20 ounces) can diced tomatoes
  • 6 cups water
Servings: people
Instructions
  1. Place all ingredients into the pressure cooker.
  2. Close the pressure cooker and set the value to sealing. Set the pressure cooker to manual or pressure cook on high for 30 minutes. When the cycle is complete, set the valve to quick release.
  3. Remove bay leaves. Serve over rice.
