Homemade Salsa

This homemade salsa is delicious and easy to make. Since I have been making my own salsa, I rarely buy salsa at the store. On this recipe I canned 9 pints, and have a half a jar left overs which I just put inside the fridge.

Ingredients
  • 12 cups tomatoes peeled and chopped
  • 4 cups bell peppers seeded and chopped
  • 3 cups onions chopped
  • 2 cups jalapenos seeded and chopped
  • ½ cup sugar
  • 2 cups white vinegar
  • 4 gloves garlis chopped
  • 2 tablespoon lemon
  • 2 tablespoon lime
  • 2 tablespoon salt
  • ½ cup cilantro chopped

Instructions
  1. Combine all the ingredients except for the cilantro and place in large stainless steel saucepan.
  2. Bring to a boil in medium high heat, stirring constantly.
  3. Reduce heat and boil gently, stirring frequently, until its thickened about 20 – 30 minutes.
  4. Add the cilantro during the last 10 minutes.
  5. Turn off the heat, and start placing the salsa you made in the jar. Leaving ½ inch headspace.
  6. Apply the top and band of the jar close it until it’s finger tight.
  7. Repeat until you finish placing them in the jar.
  8. Process in a water bath for 15 minutes. Remember to start your timer when the water start boiling after putting all the jars in the water bath.
  9. Remove the jars and let it cool down.
Recipe Notes

My lids started popping as soon as I took them out the water bath. I put towel on my counter top and sit the jars.  Don’t forget to sterilize your lid and band according to the package.  I also sterilized my jars in my water-bath while preparing all the ingredients.
