Homemade Cream of Mushroom Chicken

I am sure a lot of you out there love Cream Of Mushroom Chicken as we do. However, we have to watch what’s in the cream of mushroom chicken before we can eat. The reason is that of my daughter and I are both gluten-free and dairy-free. We can tolerate the dairy more than we can the gluten. There is some food that has gluten that does not bother us as much as the cream of mushroom.

The reason why I decided to make my own cream of mushroom is that one night I I made dinner. It was cream of mushroom chicken, it never crosses my mind that cream of mushroom use wheat. Luckily it didn’t bother my daughter stomach as much. However, on the other hand, both of my ankles are swollen, very itchy and red. My husband asked me what have you eaten today? I answered with confident oh nothing, just that cream of mushroom chicken.

Then it hit me oh my gosh that has gluten in it, thank God for the antihistamine, my swollen ankle and itchiness didn’t last all night. Since then I watch I cook very carefully, there are a few dishes that I can tolerate and still eat but there some that I’d rather not even revisit. It’s not worth all the itchiness, pain, swollen and other things that my daughter and I feel.

So this is how my homemade cream of mushroom chicken started. The way I cook my chicken was, I sprinkle some salt and peppers, then sear both sides until the chicken is brown. Repeat this method until all the chicken is all brown. Cream of mushroom chicken is so delicious and tender.

If you can’t have dairy almond milk or soy milk would work as well. My husband was so pleased and happy with the outcome of this dish. He cannot believe how tender the chicken was and all the flavors were just amazing.

Ingredients
  • 2 lbs chicken tenders
  • ½ cup white onions (Dice)
  • 2 cups mushrooms (Washed and Slice)
  • 6 gloves garlic (finely chopped)
  • 1 tbsp salt
  • 1 tbsp ground black pepper
  • 2 tbsp butter
  • 1 tbsp Garbanzo bean flour (any gluten flour will work)
  • ½ cup water
  • 1 cup milk
  • 4 tbsp olive oil
  • 1 tsp parsley
  • 1 tbsp corn starch
  • 3 tbsp cheese of your choice

Instructions
  1. Put the chicken in a small bowl, sprinkle with salt and pepper then mix well.
  2. Turn your stove to medium high and heat up the skillet. Once the skillet is hot enough, add your olive oil.
  3. Add few of the chicken, sear both side until it's brown. Do not cook them all the way since we will be cooking them with the sauce.
  4. Repeat this method until all the chicken is all brown. Set them aside.
  5. In the same skillet, add your butter, garlic, and onions sauteed for about 2 minutes until your onions are translucent.
  6. Add the mushroom, parsley, salt & pepper, water, and milk. Mix it well and bring to boil.
  7. Once it's boiling add your flour, add more flour if needed. Add your chicken one at a time. Make sure you taste the sauce before you add the chicken to make sure you don't need any more salt or pepper.
  8. Let it cook in medium high heat for about 15 to 20 minutes. Until the chicken is tender.
  9. Five minutes before the chicken is done cooking add your cornstarch and cheese. Mix it well, and let it continue cooking.
  10. Serve warm with rice or any sides you want.

  1. This sounds delicious. We don’t have gluten issues, but I still want to try this recipe. I never seem to have a can of cream of mushroom on hand, so it will be nice to have an alternative.

    1. Thank you, my kids and husband love this dish. My kids when it comes to eating mushrooms it’s 50/50 there are days that they like it and some days that they don’t. But I still use it, all they can do it push it to the side.

  2. Gluten allergies are serious business! I never realized how many storebought things have wheat in them until I had a friend with a gluten allergy. This recipe sounds awesome. I’m glad that you were able to find something that works with your dietary restrictions.

    1. Yes Gluten allergies is serious. My daughter have it bad, that’s why I have to find a way to cook the food we like to eat in different way. This recipe didn’t bother her at all and it was delicious too. So i was pretty happy with.
