Greek Salad with Lemon Paprika Chicken

Hello again everyone. Today I am sharing you this Greek Salad with Lemon Paprika Chicken.  If you are like us who loves to eat salad each week, then this recipe is for you.  Greek Salad are delicious, a lot of people add vegetables that they like to eat and some cheese as well.  This Greek Salad with Lemon Paprika Chicken is light and will definitely fill you up.

This recipe would be perfect to share for two people, however this could serve for one just as well.  Eating salad is very healthy for our body because it’s full with a lot of vitamins and flavor.  Here at our house my husband and I we eat salad pretty much each week.  Most of the time we eat it during our dinner time that way we won’t be eating too much. 

With all the ingredients that comes on this salad, I’d say it will be the my husband favorite from now on.  You can even make this ahead of time, and take it to work for your lunch.  The mixture of spinach, chicken, avocado, olives, cucumber, lettuce and tomatoes just sounds so delicious for me.  Thank you One Kitchen One Love, for being a guest here on my blog.

Ingredients
Ingredients
  • 2 large skinless boneless chicken breast halved to make four fillets
  • 4 Flatbreads store bought or use this recipe for homemade
Marinade/Dressing
  • ¼ cup olive oil
  • ¼ cup lemon juice juice of 1 lemon
  • 2 tbsp smoked paprika
  • 1 tbsp red wine vinegar
  • 2 tsp mince garlic 2 large garlic cloves, minced
  • 2 tbsp dried oregano
  • 1 tsp salt
  • cracked pepper
For The Tazatziki (or use the store bought)
  • 1 cup plain greek yogurt
  • 1 tbsp olive oil
  • 1 lebanese cucumber peeled, deseeded and grated
  • 1 clove of garlic minced
  • 1 tbsp lemon juice
  • pinch of salt
For the Salad
  • 3 Lebanese cucumbers halved lenghways and sliced think
  • 8 oz cherry tomatoes
  • 1 green pepper capsicum desseded and sliced
  • ½ red onion slice thinly
  • 7 oz marinaded feta cheese cubed
  • ½ cup pitted kalamata olives

Instructions
  1. Whisk together all the marinade / dressing ingredients in large, shallow dish. Pour out 1/3 cup to use as the dressing; reserve in the refrigerator for later.
  2. Add the chicken to the marinade and evenly coat; cover and allow to marinade for 30 minutes or overnight in the refrigerator.
  3. While chicken is marinading, prepare tzatziki: combine tzatziki ingredients in a bowl and mix well. Cover and refrigerate until ready to serve. Toss salad ingredients together and divide between four plates. Prepare flatbreads using this recipe, or warm store bought flatbreads on a pan over low heat until soft and warmed through. Transfer to warmed plates.
  4. Heat a large grill pan / skillet over medium-high heat. Remove the chicken from the marinade and add to the pan. Sear until the chicken is cooked through, about 5-6 minutes each side (total cook time of 10 to 12 minutes).
  5. Remove chicken from the pan; allow to rest for 5 minutes. Slice thickly and arrange on salad. Slice each flatbread into four pieces and arrange on salad plates. Drizzle with the reserved dressing and serve with the tzatziki.

  1. Looks delicious!! I also prefer to eat salads in the summertime since they aren’t as heavy. Will definitely try soon before the weather gets too chilly!
