Ingredients
  • 400 grams vanilla yogurt
  • 2 heaped tsp lemon curd
  • 2 heaped tsp strawberry jam
  • 1 lemon, zest only
  • 115 grams frozen berries

Instructions
  1. Line 2 small sheet pans (or 1 large one) with parchment paper. Spread the yogurt in a thick layer on each.
  2. Spoon on dollops of jam and lemon curd, and swirl with a fork or skewer. Top with the lemon zest and frozen berries.
  3. Place the pans in the freezer for minimum 2 hours. Break in to shards and either serve immediately or return to the freezer in an airtight container. Stores frozen in an airtight container for up to 1 month.
Recipe Notes

Notes:

If frozen for more than 2 hours, the yogurt may be too hard to eat immediately after removing from the freezer. If this is the case, allow it to soften for 5 minutes in the fridge before eating it.

0% fat yogurt does work in this recipe

The recipe can be customized by changing the flavour of yogurt, using different types of jam and preserves, and using different frozen fruits.
