Fish Soup with Sweet Potato Leaves

Fish soup with sweet potato leaves is the recipe that I’m gonna be sharing with you today. Sweet Potato leave is very healthy, it’s a good source of protein niacin, calcium, and iron. It’s also a great source of dietary fiber, vitamin a, vitamin c, thiamin, and more. Growing up my mom always boiled sweet potato leaves and make a salad out of it.

She will mix it with onions, tomatoes, a little bit of vinegar, salt, and pepper. You can also add spice to the salad if you want it a little bit spicy. In some occasion, she will include the sweet potato leave in the soup, which is something I love the most. I have been buying my sweet potato leaves at the farmers market in Atlanta.

Most of the time I just buy one bundle since it’s a lot already. However, lately, I have been buying two bundles of the sweet potato leaves, blanch them and freeze. So whenever I need sweet potato leaves I always have it in my freezer.

This fish soup with sweet potato leaves is so good, perfect for all weather. My husband was actually impressed about this soup. Although I used the whole fish with head included, I was very proud that he tasted the soup. On the other hand, our daughter loves this kind of soup. She really doesn’t like looking at the fish head however, she would still ask me to give her soup and fish without the head.

Ingredients
  • 8 cups water
  • 1 bundle sweet potato leaves (cleaned, about 3 cups)
  • 3 tbsp fresh ginger
  • 4 stalks green onions (cut )
  • 1 small tomato (sliced)
  • 1 small onions (sliced)
  • 3 tbsp fish sauce
  • 1 tsp salt (add more if needed)
  • 1 tsp ground pepper
  • 5 pcs fish (cleaned, any fish will do)
Servings: people
Instructions
  1. In a big pot, add your water and let it boil.
  2. Then add the tomatoes, ginger, onions and fish sauce. Let it boil for about 5 minutes.
  3. Add the fish, and boil for another 5 minutes.
  4. Then add the sweet potato leaves, salt and pepper. Stir carefully, and let it boil for another 5 minutes.
  5. Serve with rice and enjoy.

    1. I grew up eating seafood all the time since we lived near the beach. But I know a lot of people are not used to seafood, and some do have an allergy reaction to it.
