Creamy Deer Meat with Lemongrass

So when its hunting season I love checking out our local meat processing if they have some deer meat.  We pay for the process if no one claims, and take it home.  The other day my mother-in-law called one of the meat processing and she bought a bunch of deer meat.  We end up splitting the cost and also divided the meat that we got. Deer meat is something that we love having each year, we try to make the meat we buy last until the next season.

The other night my husband requested for some deer cube for dinner.  I wasn’t sure how I’m gonna cook it, however, I came up with this recipe that I thought my husband will love.  Creamy deer meat with lemongrass, yeah you hear that right.  I included the lemongrass in this recipe.  Lemongrass is used in a lot of dishes in the Asian cuisines.  We even use lemongrass in soups, teas, and curries.   The lemongrass added a really nice taste to the deer meat, and it smells really good as well.

Creamy deer meat with lemongrass is very easy to make.  You don’t need a lot of ingredients to make this recipe. I used 4 cloves of garlic, ½ of small onions slices, ½ of small tomato sliced, 1 small can of cream of mushroom, 1 tsp of oregano, 4 tablespoon lemon juice, ¼ cup of soy sauce, 3 stalked lemongrass that I chopped and 3 tablespoons ginger sliced.  Then, of course, we also need about 3 tablespoons of olive oil,  1 cup of water, salt, and pepper to taste.  I also use three tablespoons of oyster sauce and hoisin sauce.

I marinated the meat with the soy sauce, lemon juice, oregano, salt, pepper, and Worcestershire sauce for about three hours.   The reason I marinated it that long because it was for dinner.  Now if  I was serving it for lunch I would just marinate it for about an hour or so.  Creamy deer meat with lemongrass came out really tender and so delicious.  I let the meat cook for about 20 to 25 minutes in medium heat until it was tender.  Remember not to put your heat into high because it will make your meat tough and hard to eat.

You can add water as need while cooking the meat, and once it’s tender go ahead and add your cream of mushroom.  If you have cream of chicken or celery you can use it as well.  The reason I use the cream of mushroom, it’s because it’s the only one I have at the time.  Let’s get this recipe started.  You can serve this with some brown rice and sauteed vegetables.

Ingredients
  • 3 tbsp olive oil
  • 4 cloves garlic minced
  • ½ of the small onions sliced
  • ½ of the small tomato sliced
  • 1 10 oz can cream of mushroom
  • 1 tsp oregano
  • 4 tbsp lemon juice
  • ¼ cup soy sauce
  • 3 stalked lemongrass chopped
  • 3 tbsp ginger sliced
  • 1 cup water
  • 3 tbsp oyster sauce
  • 3 tbsp hoisin sauce
  • salt and pepper to taste
  • 2 tbsp worcestershire sauce

Instructions
  1. In a big bowl add the meat, soy sauce, lemon juice, oregano, Worcestershire sauce, salt, and pepper. Mix well and marinate for an hour to three hours. Depends if you are serving this for lunch ideal would be an hour. If you serve this for dinner marinate it for about three hours.
  2. Once the marinte is complete, heat your oil in the skillet.
  3. Add the ginger, lemongrass and garlic. Stir and watch to avoid burning the garlic. Cook for about 2 minutes.
  4. Then add the onions, mix well and cook for another 2 minutes. After two minutes add your tomatoes and continue cooking for about 1 minute.
  5. Pour your marinted meat with the sauce. Stir until all the ingredients are well incorporated. Add the water, oyster sauce, and hoisin sauce. Let it cook for about 20 to 25 minutes in medium heat.
  6. Cook the meat more if it's not tender enough before adding the cream of mushroom.
  7. Once the meat is tender, add your cream of mushroom and let it cook for another 5 minutes or so. Add salt if need, remember to taste your mixture first before adding anything.
  8. Serve hot with rice and other vegetables.
