½cup better melonchopped, soak in salt & squeeze the juice out reduce the bitterness.
3tbsp olive oil
1 cup shredded carrots
1½ cupsred cabbage
4 cups water
salt & blackpepperto taste
In a big pot add the oil and let it heat up. When the oil is ready to start adding your onions, lemongrass, and ginger. Mix well, let this sizzle for 3 minutes.
Add the garlic, and basil. Stir it until it’s well combine. Cook this for another 2 minutes.
Add the chicken, soy sauce, lemon juice, salt, and ground blackpepper. Mix well until all ingredients are well incorporated. Cover, and cook for 10 minutes in medium heat.
After 10 minutes put the carrots, bitter melon, cabbage, quinoa, and water. Mix well, make sure that it doesn’t anymore salt, if you need to add more salt & ground blackpepper, now it’s the time to add it.
Bring the mixture to boil, once it’s start boiling let it cook for about 15 minutes.
