Chicken with Bell Peppers and Pineapple

This chicken with bell peppers and pineapple is a very simple recipe yet healthy.  Sometimes I love cooking something that is easy and quick.  I used boneless chicken breast for this recipe, you can also use the chicken strips.  Using pineapple to this recipe definitely add more flavor to the entire dish.  The combination of bell peppers, onions, garlic. ginger and pineapple are just amazing.

If you are using the boneless chicken breast you can cut it into big strips.  However, if you buy the chicken strips that don’t require cutting it’s even better.  It will make your preparation time quicker and faster.   I also use about two cups of water to this recipe.  You will also need a little bit of soy sauce, star anise,  salt, and ground black peppers.

This is perfect to pair with brown rice or even white rice.   If you don’t like eating rice, you can make cauliflowers rice as well, it’s healthier.  I cut the bell peppers the way my chicken is cut that way there is some kind of uniform. When I cook vegetables, I normally don’t overcook them that way I still have the crunchy on the vegetables.

Ingredients
  • 3 tbsp olive oil
  • 2-3 lbs chicken strip (boneless chicken breast works too just cut them into strips)
  • 1 small green bell peppers (cut into strip)
  • 1 small yellow bell peppers (cut into strip)
  • 1 small red bell peppers (cut into strip)
  • 2 cups water
  • 4 star anise
  • 5 cloves garlic (diced)
  • 3 tbsp fresh ginger (thinly sliced)
  • 1 small onions (thinly sliced)
  • ¼ cup soy sauce
  • salt & pepper to taste

Instructions
  1. Heat your oil in a skillet or pot.
  2. Then add your garlic, and ginger, cook for about 2 minutes. Mix sure to stir and watch not to burn the garlic.
  3. Add the onions, as well as the star anise. Let it cook for another 3 minutes.
  4. After 3 minutes add your chicken, soy sauce, salt and pepper. Simmer for about 5 minutes.
  5. Add the water, and let it cook for another 5 minutes in medium heat. Add more salt and pepper if needed.
  6. Now add the bell pepper, mix well until all the ingredients are well incorporated. Cook for about 5 minutes.
  7. Serve with rice. And enjoy.
