Cheesy Chicken Salisbury

Cheesy Chicken Salisbury is delicious and oh full of different flavor.  When you don’t know what to eat for dinner but your brain is flooded with all sorts of recipes idea. You always end up making something that will surprise everyone.  I don’t cook too often since I don’t have much time on my hand most of the day.  However, I like buying ingredients that I think I’m gonna need later.  Since my husband can’t eat beef or pork, instead of using beef on this recipe.  I decided to replace the beef with the chicken and just sliced it thin.

The cheesy chicken Salisbury is very easy to make and oh full so much flavor.   You can use any meat that you wish to use, but we prefer chicken in our household.  I used the King’s Hawaiian bread because it’s sweet I think there’s about 12 in one pack.  Then I used two different cheese one is provolone and then mozzarella.  I also used two cups of mushrooms, three tablespoons of butter, one tablespoon of parsley, four cloves of garlic, one big onion that I sliced thin, two cups of chicken broth and three tablespoons sour cream.

With me adding the sour cream I wasn’t sure how it’s going to taste but to my surprise it was delicious.  Of course, we don’t have to forget salt and pepper to taste.  The reason I used two different kinds of cheese is to have the cheesy result. However, you are welcome to use any cheese you want, this cheese is what I have on hand.

This cheesy chicken Salisbury would be great to carry with you to a party or any gathering.  You can even have this for lunch and dinner, I know when I made this it only last us to dinner.  Yes, my crew can clean up this kind of meal.  Anyway, let’s get started with our recipe.

Ingredients
  • 3 tbsp butter melted and split into three (1 tbsp each)
  • 4 cloves garlic finely chopped
  • 1 tbsp parsley
  • 4 chicken breast (3 cups) sliced into thin
  • 1 big size onions sliced
  • 1 pkg. provolone cheese
  • 1 pkg. mozarella cheese
  • 3 tbsp sour cream
  • 2 cups mushrooms
  • 2 cups chicken broth

Instructions
  1. Pre-Heat the oven to 360 Degrees F.
  2. Heat your iron skillet, then add 1 tablespoon of the butter.
  3. Once the butter is hot, add your thin slice chicken. Seasoned it with salt and pepper to taste and cook it for about 5 to 10 minutes until the chicken is cook.
  4. When the chicken is done cooking, take it out from the skillet and set aside.
  5. In the same skillet add another 1 tablespoon of butter. When the butter is hot add your onions & sauteed until the onions is translucent.
  6. Then add the mushrooms, cook for another 2 minutes and then add the chicken broth. Let it boil for another 1 minute, then add the sour cream.
  7. Mix the ingredients well. Allow to boil for about two minutes.
  8. Meanwhile, melt your butter together with the parsley and garlic while waiting for your chicken to be done.
  9. Add the chicken that you have sit aside earlier. Mix well, and cook for another 3 minutes.
  10. After the mixture is done cooking. Prepare your disposable aluminum foil pan. Spray the bottom with non stick butter.
  11. Cut your hawaiin bread in half, add the bottom part of the bread in the pan, and start assembling your sandwich.
  12. Layering is up to you, I did bread, mozarella cheese, chicken mixtures and provolone. You can do one layer or two layer it's all up to you.
  13. Once it's all finish, before putting the sandwich in the oven brush the top of it with the melted butter mixture.
  14. Put it in the oven and let it cook for about 35 to 45 minutes.
  15. Serve it warm and enjoy.
Recipe Notes

The way I melted my butter have I used a small saucepan I added about one cup of water.  I turn the heat to medium, I also use one ball ring to let me bowl sit on it, to melt my butter and also to give my garlic to cook a little.

  3. This is a new recipe to me, I have never had chicken this way. I have combined chicken with sour cream before and I love it, as it makes it very creamy, but never Incorporated bread into a recipe.

  4. I love the King’s Hawaiian rolls. They add just the right amount of sweet. And I think the cheeses that you had on hand sound just right for the recipe. The ooey gooey nature of the mozzarella with the hint of spice from the Provolone would be jussstttt righttt.

  7. You’re right! How delicious recipes turn out to be when we are not sure of what to prepare and even when playing around with ingredients. Anyway, it looks delicious. Glad it turned out yummy even with sour cream.
