Cauliflower Rice Pilaf

Today I am sharing you this called Cauliflower Rice Pilaf. I was inspired by one of the youtuber Flavcity who cooking nothing but healthy food meal prep. And of course he cooked different kind of food as well not just all diet.  This cauliflower rice pilaf is perfect for my meal prepping since I am trying to lose weight and don’t really want to eat brown rice everyday.

The recipe is very simple and easy to make, with just few ingredients needed.  Making this recipe was a lot of fun,with all the ingredients combine it’s definitely healthier for you.  Cauliflower rice pilaf is definitely worth trying, you will be surprised at how good this taste.  Perfect to be eaten with baked chicken, fish or any meat that you wish to eat.

Prepping the ingredients doesn’t take a long time at all.  I had these ingredients ready within 10 minutes. And of course you can’t forget to wash all your vegetables before cutting them.  I also didn’t use too much oil on this recipe, to keep it in a low fat area.  That being said, I am trying to lose my belly fat so I am avoiding all the fats as much as I can.

Ingredients
  • 1 cup mushrooms sliced
  • ½ cup onions chopped
  • 1 tbsp ginger chopped in small peices
  • 1 tbsp olive oil
  • 1 head Cauliflower gratted ( I used the big size of the cheese grater)
  • 1 cup yellow squash cut in cubes ( giving my cauliflower a beautiful look)
  • 3 gloves garlic
  • salt & pepper to taste

Instructions
  1. Pre-heat your skillet ( i used cast iron) When the skillet is ready, add the olive oil. Let it heat up for a bout a minute. Then add the asparagus, squash, onions, ginger and mushroom. Let it cook for about 10 minutes. When you have 2 minutes left from your time. Don't forget to add your garlic. After 10 minutes add your grated cauliflower, salt and pepper. Mix it well and let it cook for about 2 minutes. Serve this with any meat you want to eat. Enjoy.

  1. Looks fantastic. I have never used cauliflower for rice before but this recipe is talking me into it for sure.

  2. I cannot get my head wrapped around all these synonym foods. lol … Rice that’s not made with rice and recently I saw hummus with no chickpeas in it . It’s great to be healthy and i personally will surely try this recipe soon but I wish people woudl come up with original names. 😀 Haha..
