Cauliflower Rice Arancini With Marinara Sauce

Today I am sharing you this Cauliflower Rice Arancini With Marinara Sauce.  If you have been following my blog, you know how much I love cauliflower.  Cauliflower is my substitute for rice, although sometimes I still use brown rice.  However, most of the time when I cook something I use cauliflower instead of rice. This cauliflower rice arancini with marinara sauce are very simple to make.  Thank you to One Love One Kitchen for this guest post on my blog.  I’m always on the look for a new recipe, so when I saw this the other day I was like yup I want to share this on my blog.

I believed this a recreation recipe from Skinny Taste.  If you are familiar with this site you know that Skinny Taste has a lot of delicious recipes.  Anyway, this cauliflower rice arancini with marinara sauce don’t require a lot of ingredients at all.  Matter fact you only need 8 different ingredients to complete this recipe.  I must confess while creating this post, my stomach is getting hungry.  What can I say, I am a food lover and this kind of just makes me hungry every time. 

These mini cauliflower balls are perfect to partner with any pasta dish that you like to eat.  You can even serve this as an appetizer to any gathering.  I don’t know about you all, but I love eating meatballs.  And so finding this kind of recipe that is healthier is definitely wonderful.   If you prefer baking this balls it will definitely cut a substantial amount of fat.  But you can also cook this in a medium skillet if you want.

Ingredients
  • 1 Italian chicken sausage link, casing removed (2 3/4 oz)
  • 2 ¼ cup riced cauliflower, frozen works great
  • ¼ tsp kosher salt
  • 2 tbsp homemade marinara (plus optional more for serving)
  • ½ cup part skim shredded mozzarella
  • 1 large egg, beaten
  • ¼ cup bread crumbs (or gluten-free crumbs)
  • 1 tbsp tablespoon grated Pecorino Romano or parmesan
  • cooking spray

Instructions
  1. Heat a medium skillet over medium-high heat. Add the sausage and cook, breaking the meat up with a spoon as it cooks as small as you can, about 4 to 5 minutes.
  2. Add the cauliflower, salt and marinara and cook 6 minutes on medium heat, stirring until the cauliflower is tender and heated through.
  3. Remove from heat and add the mozzarella cheese to the skillet and stir well to mix. Let it cool 3 to 4 minutes, until it’s easy to handle.
  4. Spray a 1/4 cup measuring cup with cooking spray and fill with cauliflower mixture, leveling the top. Use a small spoon to scoop out into your palm and roll into a ball. Set aside on a dish.
  5. Repeat with the remaining cauliflower, you should have 6 balls.
  6. Place the egg in one bowl and the breadcrumbs in another.
  7. Add the parmesan to the crumbs and mix.
  8. Dip the ball in the egg, then in the crumbs and transfer to a baking sheet. Spray the top with cooking spray.
  9. If baking in the oven, bake 425F 25 minutes, until golden. If making in the air fryer, bake 400F for 9 minutes turning halfway until golden.
  10. Serve with marinara sauce, for dipping.

  1. Is the cauliflower taste pretty strong? I’m not a big fan of it but this recipe does sound good if it was a very subtle taste! I definitely need to start eating healthier 🙂

    1. The cauliflower doesn’t taste pretty strong at all. I remembered that first time I made cauliflower rice my husband and kids had no idea it was cauliflower at all after I told them. It’s very healthy and you can season cauliflower rice the way you want it.

  2. I’m a huge fan of cauliflower dishes- who knew what a tasty substitute it can be! I’ll definitely need to try this recipe out since it calls for marinara which I looooove.
