Cajun Shrimp Quinoa Bowl

Today I am sharing this Cajun Shrimp Quinoa Bowl recipe, something that is light but full of protein. My husband and I love to enjoy food, however, we always make sure that we are eating well.  A light meal is good sometimes especially if you are on a diet but still wanted to get a lot of vitamins.

This meal is full of vitamins and flavor, with all the ingredients that are combined it will definitely fill you up for a while. Shrimp and Quinoa is a great combination of flavor, however, you can always substitute the shrimp with chicken if you don’t like shrimp. You can adjust and change up this recipe according to your taste and desire.

Ingredients
  • Vegetable Oil for cooking
  • ½ lbs large shrimp
  • ½ - 1 tsp cajun seasoning
  • 1 small yellow onions
  • 3 large garlic cloves
  • cup chicken broth
  • ¼ cup tomato sauce
  • 1 tbsp gresh lemon juice
  • salt to taste
  • 1 cup quinoa
  • 3 stalks green onions
  • 1 tbsp minced parsley

Instructions
  1. Preheat a medium cooking pan over medium-high heat.
  2. Peel and devein shrimp. Mix shrimp with some Cajun seasoning.
  3. Add some oil to the heated cooking pan and add shrimp. Sear shrimp on both sides until opaque. Take out shrimp and set aside.
  4. Add sliced yellow onion to the pan and saute until transparent. Smash garlic and add it to the pan as well. Saute onion and garlic until fragrant and slightly browned.
  5. Add broth and bring to boil. Lower heat to low/medium-low and add tomato sauce, salt, Cajun seasoning, and lemon juice. 6. Add quinoa, stir, cover and cook for about 15 minutes, until quinoa is just done.
  6. Stir in chopped green onion and minced parsley. Add shrimp back to the pot. Cook just until shrimp is heated through again.
  7. Serve right away.
