Braised Radicchio with Pancetta Cream Sauce

Each week I tried to make something different that my family and kids would love and enjoy eating. Some people think that all I cook at home is Asian food, but little do they know, I love mixing things up. There are days where my husband and kids request their favorite Asian dish and sometimes request American food.

When they request different recipes, it brings so much joy in my heart. Because not only they love everything I cook, they also miss it. My husband and kids are very easy to please as long as the food taste good they will enjoy it.

Today I’m sharing this braised radicchio with pancetta cream sauce. Yeah, I know it sounds very delicious, and yes it tastes delicious as well. It is something that you can serve on the weekend on gathering. Prepare this on any occasion and surprise your guest on how delicious it is.

Ingredients
  • 2 Medium heads of Radicchio shredded
  • 1 tbsp olive oil
  • 1 cup Red onions chopped
  • 3 Cloves minced garlic
  • cup Red cooking wine
  • 4 oz Pancetta
  • cup heavy whipping cream
  • 3 tbsp Parmesan cheese

Instructions
  1. Heat 1 tbsp of olive oil up in a skillet over medium-high heat.
  2. Once hot, add in he chopped red onion and saute for 2-3 minutes until it begins to become tender.
  3. Add in the minced garlic and saute for an additional 30 seconds.
  4. Stir in ⅓ cup of red cooking wine, and scrape to deglaze the pan.
  5. Cook the wine down until it has almost all become absorbed.
  6. Mix in 4 ounces of chopped pancetta, and saute until cooked through and a bit crispy
  7. Add in the shredded radicchio and cook for several minutes until it begins to wilt and become tender
  8. Stir in ⅓ cup of heavy whipping cream and 3 tbsp of parmesan cheese. Cook for an additional minute, stirring to combine everything well.
