Baked Delicious Whole Chicken with Vegetables

This baked delicious whole chicken with vegetables is perfect for a lazy day.  This one whole chicken last us for about two days.  I paired it with green beans and carrots since I have them on hand already.  The spices I use for the chicken are mostly the spice that I already have in my pantry.  The chicken was about over 2 pounds, it was a big one and not a small either.  It was a medium size chicken that is just perfect for the three of us.

I patted dry the chicken after I washed it, and stuffed the inside with lemongrass, onions, and ginger.  You can stuff the chicken with anything that you want.  But the lemongrass gave the chicken a delicious flavor.  I used one lemon, about a ⅓ oil, and the spice that I love using.  If you don’t like using paprika,  and chili powder you can substitute this with other spice.  Make this chicken the way you want it to taste that your family will enjoy.

I baked this for over an hour until the chicken is done and doesn’t have pink on the juice anymore.  After it finished baking I let it sit for a few minutes that way it will give will give time for the juice and flavor to settle down.  Cutting this baked chicken right away will result in being dry.  Before I baked this chicken I just use kitchen twine to tie the legs. The chicken is very moist and it was tender.

My husband and daughter really enjoyed this baked delicious whole chicken with vegetables.  Pairing this with green beans and carrots was a great idea.  To make it fancier you can make gravy and pour it over on the chicken to add more flavor.  If you like baking, give this recipe a try and let me know how you like it.

Ingredients
  • 1 whole chicken (washed and patted dry)
  • 1 lemongrass (optional)
  • ginger
  • 1 small onions (sliced)
  • 1 lemon (squeeze the juice)
  • 1 tbsp garlic salt
  • cup oil any oil will do
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp poultry seasoning

Instructions
  1. Combine all the spice in a small bowl including the lemon juice and oil. Mix well until the ingredients are well combined.
  2. Stuffed the chicken with the lemongrass, onions and ginger. Tie both legs with kitchen twine after stuffing the inside of the chicken and start rubbing your spice mixtures.
  3. Once you done rubbing all the spice mix on the chicken, set it aside. Slice the vegetables that you want to pair with this chicken.
  4. Bake the chicken on 425 degree for an hour and 20 minutes without disturbing the chicken.
  5. When it finish let it sit for few minutes, and start slicing pieces and serve with rice or vegetables.
