Anna’s Chicken Curry Recipe

Today I am sharing you my version of chicken curry.  I named it Anna’s Chicken Curry Recipe because this curry is something that I really love.  It’s not spicy at all, the flavoring is a great combination.   Since it has been awhile since I made curry my husband was pretty happy to finally have chicken curry for dinner.  When making chicken curry it’s up to you if you want it very spicy, medium heat, or mild.  The one I made it was not spicy at all that way our daughter will be able to eat the chicken curry.

You can use any meat of your choice, I prefer chicken, however, you can also use pork, and beef.   I added potatoes, carrots, star anise, onions, ginger, winged bean,¼ garlic, bell pepper, curry powder,  coconut milk, salt & pepper.   If you don’t want a lot of vegetables, you can also just use potatoes and onions.  Chicken curry is perfect to pair with rice, quinoa, cauliflower rice, some people do it chicken curry with bread.

Ingredients
  • 1 - 2 lbs chicken breast cut into strip or serving size
  • 5 red potatoes slice into chunk
  • 3 carrots slice into serving size
  • 5 pcs winged bean sliced
  • ½ cup onions
  • 3 tbsp ginger thinly slice
  • ½ cup bell pepper any color of your choice
  • 1 can coconut milk
  • 3 pcs star anise
  • 1 cup water
  • 3 tbsp garlic chopped
  • ¼ cup soy sauce
  • salt and pepper (to taste)
  • 3 tbsp olive oil
  • ¼ cup curry powder (add more if needed to meet your desire taste)
Servings: people
Instructions
  1. In the skillet or pot heat up the oil. Then add you onions and ginger. Let it cook for about 3 minutes.
  2. Add the garlic, cook for about 2 minutes. Make sure you don't burn the garlic.
  3. Then add the chicken, soy sauce and star anise mix well and let it boiled for about 15 minutes in medium heat.
  4. Add the chicken curry powder, potatoes, coconut milk, salt, ground black peppers, and water. Simmer for 10 minutes.
  5. Add the carrots and winged bean, simmer for about 5 minutes.
  6. Then add the bell pepper, mix well. Let this simmer for about 3 minutes. At this time feel free to add salt, ground black peppers, and curry powder if needed.
  7. Serve this with rice.
