Ingredients
Ingredients
  • 1 tbsp oil
  • 1 medium size cauliflower cut into florets
  • 1 large onions chopped
  • 1 tbsp ginger garlic paste
  • 2 large tomatoes dice or puree
  • 2 green chillies slit
  • 1 tsp chili powder
  • 1 tsp black pepper powder
  • 1 tsp cumin Powder / Jeeraka Podi
  • 1 tbsp coriander Powder / Malli Podi
  • 1 tsp turmeric Powder / Manjal Podi
  • tbsp garam Masala Powder
  • salt to taste
  • ½ cup heavy whipping cream
  • 3 tbsp coriander leaves finely chopped
Whole Spices
  • 1 small cinnamon stick
  • 1 tsp fennel seeds / saunf / sombu
  • 1 tsp cumin Seeds / Jeerakam
  • 1 bay leaf

Instructions
  1. Start by cooking the gobi, take cauliflower florets in a saucepan. Cover with water and cook for 6 to 8 mins. Drain it and set aside or if using an air fryer, put it on 390F for 10-15 minutes.
  2. Heat oil in a pan, add in the whole spices and tomateo, saute for a min.
  3. Add in curry leaves, onions, chillies and cook till it is golden..
  4. Add in ginger garlic paste and saute for a min.
  5. Add in all the spice powders along with some water and cook till oil separates, this prevents the spices from burning.
  6. Now add in tomato puree (if using) and cook till oil separates.
  7. Add in cooked gobi, salt and toss well in the masala. Pour water and bring it to a boil, simmer for 5 mins.
  8. Now take some cream/yogurt in a bowl, add some and mix well and add it to the curry.
  9. Simmer for another 5 mins.
  10. Add in coriander leaves and mix well.
  11. Serve with Naan.
