My Version Of Chicken Noodle Soup

This chicken noodle soup is so comforting and delicious. The ingredients are healthy and easy to find at the store. Perfect for a picky eater, you can add any vegetables that you like. My husband and kids love eating vegetables I don’t have to worry about being a picky eater.

Soup get popular this time of the year since its cold outside and also it’s very comforting. It’s something easy to prepare and heats up whenever we needed it. I love experimenting when it comes to cooking in my kitchen. I am very happy to say that this soup is the best one I have ever made. I was pleased to hear from my husband and daughter how much they love the soup.

To make the chicken broth for the soup, I use my big pot then added the oil. I let the oil get to the temperature I want and add the garlic, ginger and star anise. Let it saute for few minutes then add the chicken, bay leaves, ground pepper, salt, lemongrass, and soy sauce. Bring the chicken to boil and let it cook for about 20 minutes or until the chicken is cooked. Take the chicken breast out and slice into serving size. Read more

Fish Soup with Sweet Potato Leaves

Fish soup with sweet potato leaves is the recipe that I’m gonna be sharing with you today. Sweet Potato leave is very healthy, it’s a good source of protein niacin, calcium, and iron. It’s also a great source of dietary fiber, vitamin a, vitamin c, thiamin, and more. Growing up my mom always boiled sweet potato leaves and make a salad out of it.

She will mix it with onions, tomatoes, a little bit of vinegar, salt, and pepper. You can also add spice to the salad if you want it a little bit spicy. Beef Mami (Beef Brisket Noodle Soup)

Beef Mami (Beef Brisket Noodle Soup) is something I don’t make all the time.  It’s not that I don’t like it but sometimes I don’t have all the ingredients to create the recipe.  I had beef mami a long time ago back when I was living in Texas.  My friend took me to this little place which I called the china town of Texas.  Just everywhere you turn around there is Asian store.  Beef Mami (Brisket Noodle Soup) is a very comforting soup to have especially during winter.

Although, you can pretty much have this all year around not just in the winter really.  Back when I was living in the Philippines we make soups all the time even it’s super hot outside.  This beef mami (beef brisket noodle soup) doesn’t require so many ingredients.  Most of this recipe is probably already in your fridge or pantry.  This meal is ready for about 30 to 45 minutes, perfect for lunch or dinner meal. Chicken Sotanghon Soup

Chicken Sotanghon Soup is a Filipino soup that is recognized as a therapeutic dish to have especially when you have a cold and flu. This soup comfort you whenever you don’t feel good.   Here in the US most of my friends make this soup on a winter day.  When it’s cold outside, this soup is perfect to have in your house.  This is similar to the chicken noodles soup, however, it uses a different kind of noodles.  Instead of using the big thin noodles we use the rice noodles.

Chicken Sotanghon Soup is full of so many flavors.  There are different variation way to make this soup.  On this recipe I made, I use one whole chicken and just cut it into pieces.  I also use three boneless chicken breast that I cut into bite pieces for my husband.  Although my husband loves eating chicken that has the bone at this time I decided to add boneless one that way it’s easier for him to it later. French Onion Soup

French Onion Soup is one of my favorites to have during winter time, Although you can also eat this in the summertime, however, this is very comforting in a cold weather. I know a lot of restaurants offer French Onion Soup, however making it at home is fantastic. This kind of soup is perfect to have around holiday gathering. Since it’s been cold here in Alabama, my husband and kids have been loving the soup I have been making for them.

Finally, it’s winter weather here in our end. I have made a lot of soup and the leftover I packed in an airtight Tupperware and put it in the freezer. This recipe I am sharing with you today is just full of flavor and so delicious. A comfort soup for everyone, perfect soup to be added to your daily meal.
