Chicken & Bitter Melon is one recipe that I do think I have made before. My husband, he loves eating bitter melon, although I always squeeze most of the juice out of it. If you don’t squeeze the juice of bitter melon it makes it very bitter. It a taste that I don’t really like much since I was a kid. My mom showed me that by soaking the sliced bitter melon with salt you can pretty much squeeze out most of the juice. So to make it short, each time I cooked bitter melon I always soak it with salt after slicing it.
On this recipe, I used the chicken that is cooked already. You can beef on this recipe as well, but we prefer chicken in our house. Using the cooked chicken from the store make this meal even faster. I was finished within 30 minutes, you can eat this with soft taco or with rice. The ingredients are pretty easy to find except for the bitter melon of course. You have to go visit your local Asian store and see if they have bitter melon for sale. Most of the Filipino store sell bitter melon.
The Walmart Rotisserie chicken is what I used in this recipe. I also use red tomatoes and green tomatoes just because I love the combination of the color.

My black bean chicken is very easy to make and delicious. I first tasted a black bean chicken at our Vietnamese friend house. Her mother taught me how to make it and shared me the ingredients. My husband loves eating black bean chicken, although I don’t make it all the time. However, when he wants to eat a different meal, I always make him the black bean chicken. The sauce I made it at home, I just bought the ingredients for the sauce and processed it at home. Although you can buy ready to use black bean sauce at the Asian store, however, it’s always nice to make your own. That way you know what’s in the black bean sauce.
On the fried chicken legs, I use the wheat flour, added some salt and pepper to taste. I didn’t do much on the fried chicken legs since our daughter doesn’t like many flavors. I scrambled two eggs to use for dipping and then the flour to cover the chicken. The broccoli is very easy because all I did to it was sauteed with some greens. Of course, I used onions, garlic, and ginger to give it a really good taste.
