Cajun Shrimp Tacos

Shrimp Tacos is one of my favorites, but with the mix of Cajun oh my it’s even better. Cajun shrimp tacos sound really good for me right now.  My husband and I we love spicy food, even our kids enjoy eating spicy food as well.  However, I always make sure that it’s not too spicy for our little daughter.  As you all know our family is a big shrimp eater.  Each time I make shrimp I tried to create different recipes for my husband and kids.  Although, sometimes it’s costly, it’s worth it because of how delicious shrimp is.

Cajun shrimp tacos are easy to make and it’s full of flavor as well.  You can make this recipe however you want, even add some slice of mango to incorporate the avocado. This meal is perfect to be added to your weekly meal planning, especially it’s light and full of protein as well.  Using wheat tacos for this recipe would be great as well if you want this to be healthier.

Ingredients
  • 1 lbs large shrimp peeled and deveined
  • 1 ½ tbsp cajun seasoning
  • 2 cloves garlic minced
  • 1 tbsp extra-virgin olive oil
  • kosher salt
  • freshly ground black pepper
  • 1 tbsp butter
  • 2 mangos chopped (1 ½ cup)
  • 2 avacado diced
  • 1 lime
  • ½ small red onions chopped
  • 1 jalapeño seeded and chopped
  • 1 tbsp cilantro chopped
  • 8 small tortillas
  • 2 cup shredded red cabbage (¼ head)
  • lime wedges for servin
Servings: people
Instructions
  1. In a large baking dish, combine shrimp, Cajun seasoning, garlic, and olive oil. Season with salt and pepper and toss until shrimp is fully seasoned.
  2. In a large skillet over medium heat, melt butter. Add shrimp and cook until pink, 3 to 4 minutes, flipping once.
  3. Make mango salsa: In a medium bowl, combine mango, avocado, lime juice, red onion, jalapeño, and cilantro. Season with salt.
  4. Make tacos: Top tortillas with red cabbage, shrimp, and mango salsa. Serve with lime wedges.

Cajun Shrimp Quinoa Bowl

Today I am sharing this Cajun Shrimp Quinoa Bowl recipe, something that is light but full of protein. My husband and I love to enjoy food, however, we always make sure that we are eating well.  A light meal is good sometimes especially if you are on a diet but still wanted to get a lot of vitamins.

This meal is full of vitamins and flavor, with all the ingredients that are combined it will definitely fill you up for a while. Shrimp and Quinoa is a great combination of flavor, however, you can always substitute the shrimp with chicken if you don’t like shrimp. You can adjust and change up this recipe according to your taste and desire.

Roasted Brussels Sprouts and Crispy Baked Tofu with Honey-Sesame Glaze is what I am gonna be sharing to you today.  Again I want to say thank you to my friend One Love One Kitchen for giving the honor to share her recipe here in my blog. Since my husband loves the Tofu we ate at one of the restaurants we visited last weekend.  I thought it’s time to find a nice recipe that he might end up liking. Roasted Brussels Sprouts and Crispy Baked Tofu with Honey-Sesame Glaze looks delicious. Although we don’t cook tofu in our house due to the texture of it.  However, I wanted to try making this kind of meal for my husband and my kids, just to see if they like or not.

This recipe seems to look really delicious and inviting. It’s healthy and full of flavor, I know cooking tofu isn’t hard to do.  However, tofu is very easily mess up as well. My sister and her family they eat tofu all the time.  Back when they had a big get together they invited us to join their party. All they have prepared was tofu, it was very delicious.  I was very surprised at how many recipes they have made using tofu.  The taste was amazing, and it even made me eat even more. Read more

Chicken & Bitter Melon

Chicken & Bitter Melon is one recipe that I do think I have made before. My husband, he loves eating bitter melon, although I always squeeze most of the juice out of it.  If you don’t squeeze the juice of bitter melon it makes it very bitter.  It a taste that I don’t really like much since I was a kid.  My mom showed me that by soaking the sliced bitter melon with salt you can pretty much squeeze out most of the juice.  So to make it short, each time I cooked bitter melon I always soak it with salt after slicing it.

On this recipe, I used the chicken that is cooked already. You can beef on this recipe as well, but we prefer chicken in our house. Using the cooked chicken from the store make this meal even faster.  I was finished within 30 minutes, you can eat this with soft taco or with rice. The ingredients are pretty easy to find except for the bitter melon of course.  You have to go visit your local Asian store and see if they have bitter melon for sale. Most of the Filipino store sell bitter melon.

The Walmart Rotisserie chicken is what I used in this recipe.  I also use red tomatoes and green tomatoes just because I love the combination of the color.

Mommy Home Cook Meals

Today I am sharing your these Mommy Home Cook Meals. As you all know I like preparing healthy food for me and husband. Sometimes I have to cooked fried food for our kids as their request. Especially if they are tired of eating vegetables. I am sharing you today these four simple recipes that are delicious and easy to make. Since we like eating deer meat we try to keep deer meat in our freezer all the time. This year we have enough deer meat that will last us until the next deer season.

My black bean chicken is very easy to make and delicious. I first tasted a black bean chicken at our Vietnamese friend house. Her mother taught me how to make it and shared me the ingredients. My husband loves eating black bean chicken, although I don’t make it all the time. However, when he wants to eat a different meal, I always make him the black bean chicken. The sauce I made it at home, I just bought the ingredients for the sauce and processed it at home. Although you can buy ready to use black bean sauce at the Asian store, however, it’s always nice to make your own. That way you know what’s in the black bean sauce.

On the fried chicken legs, I use the wheat flour, added some salt and pepper to taste. I didn’t do much on the fried chicken legs since our daughter doesn’t like many flavors. I scrambled two eggs to use for dipping and then the flour to cover the chicken. The broccoli is very easy because all I did to it was sauteed with some greens. Of course, I used onions, garlic, and ginger to give it a really good taste.
