Homemade Cream of Mushroom Chicken

I am sure a lot of you out there love Cream Of Mushroom Chicken as we do. However, we have to watch what’s in the cream of mushroom chicken before we can eat. The reason is that of my daughter and I are both gluten-free and dairy-free. We can tolerate the dairy more than we can the gluten. There is some food that has gluten that does not bother us as much as the cream of mushroom.

The reason why I decided to make my own cream of mushroom is that one night I I made dinner. It was cream of mushroom chicken, it never crosses my mind that cream of mushroom use wheat. Luckily it didn’t bother my daughter stomach as much. However, on the other hand, both of my ankles are swollen, very itchy and red. My husband asked me what have you eaten today? I answered with confident oh nothing, just that cream of mushroom chicken. Read more

Southern Breakfast in The House

This weekend I decided to surprise my kids and husband for a delicious breakfast before going to church. Eating breakfast every day is a must at our house. Because not only does it helps you start your day but it also great for you. My husband loves having a big breakfast on the weekend, and so our kids. So I bought some sausage, eggs, and some ingredients I need to make my homemade drop biscuits.

Of course, we cannot forget serving some coffee. For some reason, if I cannot drink coffee in the morning, my day feels like it’s dragging. I limit myself about 3 cups a day of coffee. But still that’s a lot, I am slowly trimming it down to 1½ a cup a day. So far I am doing good in some days.

Pineapple Chicken with Coconut Milk

This Pineapple Chicken with Coconut Milk is a recipe I saw from a friend of mine. I’ve never tried combining pineapple and coconut in a dish like chicken. However, I didn’t regret doing it so, because of how delicious it came out.

My husband and daughter love this dish, a matter of fact we all enjoyed it. It took me about 30 – 45 minutes total to finish cooking this dish. As you can see in my video, none of the vegetables is overcooked. The chicken was marinating on the pineapple juice while I was prepping all the veggies.

The reason I marinated the chicken with the pineapple juice, is to give it more flavor. You can pair this dish with rice or eat it by itself. So let’s get this recipe started, shall we? Read more

Teriyaki Shrimp Stir Fry

Teriyaki Shrimp Stir Fry is the recipe that I am gonna be sharing with you today.  Thanks to One Love One Kitchen for guesting here again on my blog.  Teriyaki is something that my husband and kids love to eat.  I am not a big fan when it comes to teriyaki however, I eat teriyaki but not all the time. Teriyaki shrimp is really delicious, if you don’t like seafood, you can make teriyaki chicken, beef or even pork.

What I like about teriyaki is you can load it with a lot of vegetables.  Some chef only adds certain vegetables that they prefer or like.  But when I do cook teriyaki chicken or shrimp I always add different vegetables that way the flavor will be much better.  This teriyaki shrimp stir-fry would be perfect to pair with some brown rice or even quinoa.   Read more
